Perfect Peach Cobbler

It’s that time again, where Sunday comes and I share some food with you that’s particularly good for the soul. I’m thrilled to share this recipe with you today because it’s my first time taking one of our actual family recipes and tweaking it a bit to make it more healthy.


And when something tastes so good that you can’t even tell that it’s actually good for you, that’s a success in my book.

Peach cobbler has been my mom’s specialty since she was a teenager and the special recipe was passed down to her from a family friend. This is the dessert that people always ask her to bring to gatherings, the thing that inspired her to start her own business. It really is a gem. So I asked my mom if she would teach me the method so that I could know how to make cobbler and pie on my own.

From what I can tell, it’s not as much the recipe as it is the method that really makes the difference between an okay pie and an oh my looord that’s good pie. So I watched, took pictures, and make lots of notes as my mom made some pies and cobbler for the family (we bought a whole CASE of peaches for this endeavor!).

After learning the ways of the Jedi master, and making a pie with her recipe to really get the method down, I took the plunge and substituted some ingredients to “healthify” this cobbler. Here are the changes I made and reasons why they are good options.

instead of lard or shortening –> Earth Balance shortening (because it contains no hydrogenated oils and has less fat)

instead of all-purpose flour –> half white whole wheat flour (because it has more of the wheat’s natural nutrients like protein)

instead of butter –> Earth Balance sticks (again, no hydrogenated oils and less fat)

instead of white sugar –> organic sugar (more flavor and less processed)

instead of cooking the peaches before baking –>soak them in their own cooked juice overnight (to retain nutrients and texture) –this was a tip from mom!

There are a ton of other things you could do to make this healthier, but I wanted to keep ALL of the qualities of a traditional peach cobbler. You could definitely use agave instead of sugar in the filling or just leave out the sweetener all together, but you will get a different flavor for sure. Or if you’re brave you can use all whole wheat flour instead of just half. This dessert is not completely vegan because it contains an egg, but you can leave the egg out and have a yummy vegan crust! The easiest way to make this is to do the filling and crust the night before, and then assemble and bake your pie a few hours before you want to eat it.

Now how ’bout that recipe?

Perfect Peach Cobbler

For the filling:

  • 8 fresh peaches, peeled and thickly sliced
  • 1/2 c. + 1/4 c. organic sugar
  • 2 t. cornstarch
  • 1/4 c. water

-Take your sliced peaches and sprinkle the 1/4 c. sugar over them. Use a spatula to toss the peaches in the sugar until they are coated. Cover and let sit at room temperature to let the peaches macerate (release their juices and soften up) for at least 3 hours. You should get a nice amount of peach juice at the bottom of the bowl.

-Drain the peach juice from the bowl and place that juice in a small saucepan over medium-low heat. Add the 1/2 c. sugar and stir until simmering. Cover and let simmer for 15 minutes, stirring ocassionaly.

-Stir the cornstarch and water together in a small bowl to dissolve the cornstarch. Add that to the peach juice.

-Stir the juice until it is thick and the cloudiness of the cornstarch goes away. Remove from heat and pour over your fresh peach slices. Stir to coat, cover, and let sit in the refrigerator overnight. Makes filling for ONE cobbler.

For the crust:

  • 2 1/2 c. unbleached all-purpose organic flour
  • 2 1/2 c. organic white whole wheat flour
  • 1/2 lb. Earth Balance shortening (2 sticks)
  • 2 1/2 Earth Balance buttery baking sticks
  • 2 t. salt
  • 4 t. organic brown sugar
  • 1/2 t. baking powder
  • 1 T. apple cider vinegar
  • 3/4 c. ice water
  • 1 egg

-In a mixing bowl of food processor bowl, mix together the flours, salt, sugar, and baking powder.

-Cut the shortening and 1 buttery baking stick into small pieces and dump that into the dry ingredients. Mix on the lowest speed for a couple minutes, until the shortening and “butter” are broken down into large pea size pieces.

-In a small bowl, whisk together the ice water, egg, and vinegar. Pour the liquid into the rest of the dough ingredients, making sure not to get the ice cubes in there with it.

-This is the part where to have to be careful! Mix on LOW in increments of about 5 seconds, JUST until the mixture starts to ball together and look like an actual dough. This will take less than 30 seconds of mixing, it doesn’t take much.

-Empty the dough out onto a piece of plastic wrap, gently form it into a ball, and refrigerate until ready to assemble. Makes crust for TWO cobblers.

When you’re ready to assemble:

-Preheat the oven to 375 degrees.

-On a large floured piece of plastic wrap, roll the dough out into a rectangle with a rolling pin. Roll in one direction and then pick up the pin to roll in another direction (try not to roll back and forth in the same movement).

-Fill your baking dish (I used 9 x 13) with your prepared filling.

-Use the remaining half of an Earth Balance stick to dot the top of the filling.

-Take your rolled out crust and lift it up using the plastic wrap. Carefully flip it upside down over the cobbler pan to cover the top. Pinch the edges down (however you like, this is a rustic situation) and score the dough with a pair of kitchen shears.

-Bake in the preheated oven for about an hour, or until the crust is a nice deep brown.

Let it cool, while it stares you down in all its sweet juicy beauty, for at least one slow and agonizing hour.

Spoon out and enjoy! One cobbler makes 10 dessert servings.

A flaky, buttery crust–without the butter! I’ve got nothing against butter though, and you are more than welcome to use it instead if that’s how you roll.

The peaches inside will be the PERFECT consistency from being fresh and soaked in their own juices. Not too mushy, but not too firm. This counts as a serving of fruit, people! 🙂

You can bet your bottom dollar that you will be seeing more of this pie crust in the future. And hopefully I’ll get around to some experimentation with other types of whole grain flour! Oh, the possibilities!

Good Food, Good People

I decided this morning that I wanted to do a little experiment with breakfast and make a mini omelet with just 1 egg. I wanted to have a pretty small breakfast because I knew I was going somewhere awesome for lunch and wanted to save room.

It turned out great! It was very simple and fast but delicious. I used a very small skillet to make it easier to flip the eggs onto themselves. One day I will have to do a step-by-step omelet tutorial with pictures, but that’s hard to do when it’s just you in the kitchen!

Mushroom Dill Mini Omelet

  • 1 egg
  • splash of milk (about a couple teaspoons)
  • 1 sprig of dill, chopped
  • 1/2 T. butter or olive oil
  • 1/4 c. shredded swiss cheese (less really, but if you love cheese go with the full 1/4 c.)
  • 3 baby bella mushrooms, sliced
  • salt and pepper, to taste.

-In a small bowl or a cup, whisk together the egg, milk, and dill. You can add a little salt and pepper if you like.

-Heat a small skillet over medium heat and add half of the butter/oil. Swirl it around to melt over the entire pan. Add in the sliced mushrooms and sautée until they are tender and dark in color. Use a spoon or spatula to remove the mushrooms from the skillet.

-Add the remainder of the butter/oil and swirl it around the pan until it’s melted. Pour in the whisked egg. Gently swirl the pan around to spread the egg slightly. Lower the heat to medium-low and allow it to cook undisturbed for 2 minutes.

-Add the shredded cheese and mushrooms to the top of the egg in the pan (don’t stir it!). Gently use a spatula to lift one side of the cooked egg and fold it over to the center. Do the same with the other side, so that the sides  fold over each other. Flip the whole omelet over (folds on the bottom) and cook for another 30 seconds or so. Use a spatula to remove from the pan and enjoy! Makes 1 small omelet.

This was a PERFECT breakfast with a clementine and a piece of whole wheat toast. Filled me up just long enough to hold out for…

My very first blogger meetup, which was at R. Thomas Grill! I had never been to this place before but have heard great things about it so I was really looking forward to the food. The place is very fun and quirky, and the owner R. Thomas himself was walking around watering his plants and talking to the customers.

I was also really looking forward to who I was having lunch with, 11 other wonderful blogging ladies! It was a wonderful moment to not feel like a crazy person taking a picture of my food, because everybody else was doing it, too! LOVE IT!

I ordered the veggie burger, which was served on a sourdough wheat bun with a seaweed salad on the side. The veggie burger was SO GOOD, moist and full of flavor.

The salad was delicious too, but it was pretty spicy and I’ve got a low tolerance for that so I didn’t eat most of it.

I had a great time talking about everything from our favorite food blogs to weddings, I only wished I could have spent more time with everyone who was there. I even got some goodies to take home!

Tina brought some lovely Love Grown Foods treats!

And the awesome Atlanta Running Mom brought us goodies, too!

It was a great time, I’m really glad I was still here in Atlanta so that I could make it.

When I got home I went with my mom and hubster to our local Asian market to pick up some groceries for the week. I HAD to bring my camera with me to show you the awesomeness of this place.

It’s awesome for two reasons. First, the sheer quantity and selection of produce is incredible.

The second reason is the incredible prices. Sometimes the prices are so low that it makes me feel sketchy for buying something because it just doesn’t seem right. We got strawberries at .79 a QUART!!! Insane!

They also have a great selection of unusual ingredients and things that regular grocery stores just don’t bother to carry or don’t bother to stock well. Like my beloved plantains!

And MORE than one aisle of Ramen and various other kinds of noodles.

We walked away with a whole case of peaches for around $15! We plan on making some serious pies and cobblers in the near future.

Under the Sea

I got another thing checked off my summer bucket list today!

We visited the Georgia Aquarium, which (in case you weren’t aware of it’s awesomeness) is the largest aquarium in the WORLD!

I’ve been before, but Jason had never been and Ashley was a baby the last time she went, so I felt like another visit was definitely in order. They have the aquarium split up into different climates/types of animals, which is great because it kind of makes you feel like you’re being transported to a different part of the world each time.

There were SO MANY different and beautiful animals, it is so worth the trip to see them all. Nature never ceases to amaze me. I was reminded of the Disney movie Oceans that we saw a few weeks ago, where the narrator said that it’s almost as if nature was testing out every possible combination of shapes, colors, and sizes when it created the creatures of the ocean.

It was crowded and there was a lot of walking involved, but we all had a blast seeing the animals. It was hard to take pictures and out of the few hundred I took, very few came out in focus (smudgy glass, moving animals, people walking in front of the camera, etc.)! But some did so that’s what matters. This was definitely a highlight of the summer for us.

(my brother David was there too but he doesn’t like it when I take pictures of him! 😛 I did get some with him anyways though!)

I think Ashley’s favorite part was 1. the dolphin show (which was BEAUTIFUL, but they don’t allow any photography! 😦 ) and 2. the various “touching galleries” they have around the aquarium. Ashley go to pet a sting ray, a shark, a sea star, and a sea anemone!

I’m SO glad Jason and I got a long weekend off from work so that we could make this trip before the kids go back to school.

After we had seen all of the exhibits and both of the shows that the aquarium is offering right now (which, bee tee dubs, took us almost 6 hours including lunch), we went just around the corner to enjoy the warm afternoon and some cool refreshments.

Yeeaaaahhh…you can guess what I got.

I. Have. A. Problem. Clearly. I blame it on the heat…that works, right? I fully expect to have gained weight when I return home to Virignia (that’s the only place I have a scale), which is fine, but ice cream every day is not a healthy way to gain weight. Obviously. But I’ve discovered a way to control the ingredients inside so that it’s not purely sinful. Can you guess which item on my bucket list I’ll be checking off next?

  • Go to the beach
  • Bake a fresh peach cobbler
  • Visit the aquarium
  • Transfer family photos and videos onto computer
  • Visit (ambush) the health food store
  • Go to Sweet Auburn Market
  • Make some homemade ice cream

While we were enjoying our cold treats, we had an amazing view of the Atlanta skyline.

I can feel myself missing Atlanta already. While I have NOT enjoyed working downtown for the summer, it did give me a chance to appreciate the city in a way I really never have before. My new camera has a setting that stitches frames together to make a panoramic picture, so I wasted no time trying it out from where we were.

There’s no place like Hotlanta.

On Green Street

It’s no secret from my recent posts that my diet has been all whacky lately. Between all the traveling and living with my parents, my diet has gone back almost 100% to what it was like before I starting this healthy eating “journey”. Since we are going to be stationary now for a couple weeks, I decided that enough is enough and I need to put my efforts back into eating the way I should be and want to be. This should help:

I just got back from a massive trip to DeKalb Farmer’s Market, and I stocked myself up on some fresh produce and whatnot for the week. I can’t tell you how much I’m going to miss this market when we go back to Virginia in a couple weeks! The prices are amazing and the selection and quality just can’t be beat.

As usual, I got everything I needed and more for under $50. Can’t this place just pick itself up and come with me to law school?!

Earlier today, Jason and I went with my mom and little sister to enjoy an early dinner at an old family favorite, Greenwood’s on Green Street. It’s a farm to table restaurant that serves Southern comfort food in very hearty portions, and my family has been going there for years. My late grandma used to love going to get their delicious roasted duck dinner. Everything about this place screams comfort to me, from the overgrown garden at the entrance to the homey and quirky little decor details throughout the restaurant.

The restaurant proclaims that “Homemade meals are made fresh daily using locally-grown, organic produce, dairy, grains and meats whenever possible. Greenwood’s supports local farms and sustainable agricultural practices as part of our Farm to Table ethic. All of Greenwood’s vegetables are meat and dairy free.” Sounds just about perfect to me.

I wasn’t really in the mood for meat (could it have to do with the pound of crab legs and burger I ate yesterday?…) so I ordered a vegetable plate with collard greens, brown rice and gravy, and cheese grits. All of my sides were delicious but I think it was the greens that really brought it home for me. They had just the right amount of vinegar and other seasonings and had just the slightest amount of sweetness.

Our whole table was very happy with the food. Everything at Green’s is always so fresh tasting, it reminds me of eating a meal straight off the stove at home.

This is as close as it gets to home cooked food at a restaurant, but I want to start getting back to my own home cooked recipes on here! Look out for some exciting (and hopefully healthy) ones in the next few days.

WIAW, Midnight Train to Georgia

Well this might be the latest I have ever blogged! But I couldn’t pass up a WIAW so I decided I would post whenever we ended up getting home from Jekyll Island, which was apparently midnight. So as most of you are probably reading this on Thursday, good morning/afternoon! 🙂

 

We took our sweet time with the drive back today and actually had an awesome time. As I usually do on Wednesdays, I’ll tell you all about the day through what we ate!

Breakfast: pineapple, cantaloupe, strawberries, yogurt, coffee (and later snagged a bagel with jelly)

Snacks: random food from the conference, some popcorn and then later this mixed nut dessert bar of some kind that was really tasty

Lunch: crab legs, fried okra, cheese grits, water

I was CRAVING crab legs the entire time we were down there and someone gave us a great recommendation for this place on the water called Skipper’s that’s on the trip towards Atlanta. The crab legs were so fresh and meaty.

And the sides were delicious too, perfectly seasoned and piping hot.

This place was so charming and just all around a great stop.

They had all sorts of animals on the property! Right in front of the restaurant is a little pond full of fish and turtles.

And we even spotted WILD gators right outside under the pier. Yikes. I was happy to have a zoom lens that enabled me to take good pictures but still be plenty far away from Mr. Gator.

We decided after lunch that we had to stop in Savannah. It was one of the stops on our honeymoon, one of our favorite, and we were so close on the drive back that we just couldn’t help it. It was so strange driving into Savannah again, I was having major deja vu. All the familiar sights of the city greeted us and it felt just like it did when we were honeymooning!  The horse and carriage tours…

And last but of course not least, the amazing food of all different kinds. When we first arrived we went to City Market downtown, which is FULL of good food, and lots of other fun things.

I immediately went toward Gelatohhh, a wonderful little place that we remembered well from the honeymoon.

Crazy! I think we look even better now. 😛 We definitely look older, which is weird because it’s only been a year! Anyways, after a delicious gelato we walked down to River Street to see more sights and make reservations for dinner. River Street is one of the most popular attractions in Savannah, it’s a historic street full of shops and restaurants that’s directly across the cobblestone road from the river.

Lucky for us the crowds were low for some reason and because it was overcast the weather was AMAZING, I’m talking in the 70’s amazing!!! We took a nice long walk and visited our favorite candy shop along the way to pick up some fresh pralines to take home.

Eventually we made it to our dinner reservation at Vic’s on the River. This was one of my favorite restaurants from the honeymoon and it was pretty reasonably priced so we decided to visit again.

We weren’t really that hungry (probably something to do with having dessert before dinner…) so we just went light and shared an entree.

Dinner: biscuits as a starter, side salad, burger with gruyere cheese, and a “Vic’s mojito”

The food was excellent, just as we had remembered, and everything really hit the spot. We felt full for the remainder of our trip into Atlanta.

So that’s what I ate Wednesday on our midnight train to Georgia! Too bad coming in at midnight also means crazily finishing a blog post at 2am…yeesh. But I’m not worried because our boss was nice enough to give us the NEXT TWO DAYS OFF since we worked at the conference through last weekend!!!

A Perfect Beach Vacation

If the title of this post annoys you, don’t worry. It’s 100% sarcastic…but I should have just let you figure that out yourself. One could say that I’ve been somewhat moody today. Jason would say more than that.

Since we arrived here on a work conference vacation, all I’ve wanted to do was spend a nice relaxing day on the beach. After today I feel that I am quite experienced in that arena, so I would like to share with you how to be sure you make the most of your perfect day at the beach.

First, make sure you mysteriously tear the only pair of contact lenses you brought with you so that you are completely blind and unable to drive for the remainder of your trip. Make sure you have a husband with you who refuses to listen to driving directions likes to take the very scenic route everywhere so that it takes you half an hour to get to the beach of your choice that was only five minutes away.

Enjoy some of nature’s stranger displays, like beached trees.

You may realize that this particular beach is a little creepy? unsettling? unusual, but stick around anyways.

Wave at the horseback riding tour that goes by as they look at you like you’re insane awesome for taking so many pictures of them.


Next, about 5 minutes after arriving on said beach, you should probably notice those ominous storm clouds brewing right over your head nearby.

You can probably guess what you do next. Get downpoured on. I’m talking soaked through to your underwear poured on (tmi?). Your husband should probably help shield you and your fresh hairdo from the rain, but instead he will yell “The CAMERA! Put it in the case NOW, IT CAN’T GET WET!!!”

Then sit in agry, wet silence once you reach the car. This is key to making the day perfect. Explain to your husband that you want to go eat dinner because you’re hungry. When your husband decides the rain is not going to let up and drives you back to the hotel, be super stubborn and just sit in the car when he goes into the room. There’s no way you should admit the fact that the fabulous beach day is over, and you’re hungry.

It will be an hour before he comes back to the car to see why the heck you never came inside, but it’s totally ok because you will obviously waste everyone’s time make your point. When you finally arrive at your dinner destination, make sure it’s a place with a 45 minute wait. You wouldn’t want to miss starving to death all of the great people watching you can do while you wait. When you are seated and look at the menu, you may be tempted to get a salad. You want to be healthy. But this day will just be one long string of bad luck so great that you HAVE to drown your sorrows top it off with whatever your heart desires on the menu.

This food will make you feel like brand new. Greasy and uncomfortably full, but somehow still brand new. You will re-realize why it is that you take pictures of what you eat and write about it, and why you spend hours a day reading about other people doing the same. Food is magical, there’s really nothing else in the world that can do just what food can. And since you’ll be feeling good, might as well keep the good feelings comin’ with some ice cream. You are lactose intolerant and will really regret it deserve it.

And when you are blogging late that evening, you might as well confess to your readers that you and your husband have been eating ice cream pretty much non-stop for the past few days.

Well I hope that gives you some good tips about how to enjoy a perfect day at the beach that you’ve been wanting all year. I promise I’m not in quite as bad a mood as this post is probably making it seem. Let’s hope I can skip the ice cream tomorrow…I can still feel the sugar coursing through my veins.

Mama Nems’

We are still on Jekyll Island for a work conference but there’s a special Soul Food Sunday post I’ve been planning to share with you guys that takes it back to when we were in Florida just last weekend.

Side note: I realize that I’m probably confusing many of you by zipping around all over the place in a way that makes no sense…my apologies, especially if you are a new reader. I LIVE in Virginia permanently, I am living in Georgia temporarily for the summer, I went on vacation to Orlando about a week ago, and now I’m in a work conference in Jekyll Island (which is in Georgia). I swear that I usually NEVER go anywhere.*end of side note*

Before I get to the food, I’d like to show you some pictures of the other places we visited that day in Orlando. We had heard great things about the Animal Kingdom Lodge (one of the Disney resorts) and so we took a drive down there to see the resort and the animals.

It. Was. Beautiful.

They have actual safari animals roaming around the hotel property. It would be so awesome to be a guest at this place!

After a long day full of fun and other adventures, my mom wanted to take us to this place called Mama Nems‘ for dinner. This Orlando joint is famous for its soul food, so we weren’t about to argue when my mom said she wanted to go.

For those of you who aren’t American/aren’t Southern/don’t hang out with many Black folks, I want to explain the name of the restaurant to you. Jason looked at it and thought Mama Nem was a person. This provided me with some hearty laughs. The name comes from the phrase “mama n’em”, translation “mama and them“, further translation…one’s family. As in, “I’m going to go have dinner at my family’s house” –> “I’m gon’ go eat at mama n’em’s.” See? HAHA, I think the name is awesome and funny. It’s owned and operated by a church, and the food was great.

We all ordered classic soul food dishes at the cafeteria style line, and we got a huge amount of food for an amazing price!

I ordered the catfish with collard greens, candied yams, macaroni and cheese, and cornbread. It was delicious.

Speaking of deep fried and greasy, you all have likely noticed that I haven’t been making the healthiest eating choices lately. I’ve slipped into a lot of my old eating habits since being at home with my family this summer. Have you noticed that I COMPLETELY gave up cutting dairy out of my diet even though I’m very sensitive to it? Those of you who are new readers might not even know that I’m not supposed to be eating dairy at all. You sure can’t tell from my posts lately! Anyways, I will address this issue in a later post but I want to thank you all for not getting judgmental and saying anything about it. Being healthy is still incredibly important to me, and I have not given it up!

Flyin’ Solo

Happy Saturday! Is there such thing as a Saturday that’s not happy? I don’t think so. Especially not this one because I got a photo of my mini chocolate bundts accepted to Foodgawker and Tastespotting! 🙂

I have to thank you all again because if it weren’t for you amazing people who take the time to read what I write and look at my pictures, I would never have even pushed myself to learn more about this hobby that I’ve now fallen in love with. THANK YOU! I’m going to put a link to my (very new) Foodgawker gallery in the sidebar here because hopefully they will keep accepting my pics.

In other news, Jason and I arrived in Jekyll Island this afternoon!

We’re here for a conference and not vacation, but our boss said that we should have a lot of free time to enjoy the area. Being in Jekyll doesn’t even feel like Georgia anymore! I love that about this state! It’s so big and there are so many different kinds of places to visit that you will never get bored.

We’re so close Florida…and Savannah…it’s hard to not try and turn this into a real vacation! Jason is enjoying the island right now by doing some shark fishing with other guys in the office. I hope he comes back alive!!! He’s never gone fishing before but when our boss said they were going night shark fishing, and that Jekyll was one of the top breeding grounds for sharks in the world (??!!!) , I told Jason that it sounded like one of those once in a lifetime things that you just can’t pass up. While he wrestles the sharks, I decided to check out the visitors center.

And then I checked us into the hotel that the place we’re interning for got us. They made such a good choice in the Sea Palms Resort, I love it here!

A nice big suite with full kitchen, dishes and all!

And his and hers sinks, which we’ve actually NEVER enjoyed before! They will be a must have when we buy a house one day.

I’m flyin’ solo this evening. It feels strange because I haven’t spent an evening alone in…well…since Jason and I have been married! Guess I better go enjoy all of the Food Network I can before he comes back from fishing!

Triple Chocolate Mini Bundt Cakes with Peanut Butter Glaze

Good news! One day later and I have already completed an item off my summer bucket list.

Go to the health food store

I went to Mother Nature’s, a wonderful market that’s only about 5 minutes from my house. I’m like a kid in a candy store there, which is why I don’t go often…I’d break the bank. I went in search of some natural allergy medication and a new multivitamin. A very sweet and knowledgeable (really young!) salesperson helped me find just what I didn’t even know I needed.

She told me that this probiotic superfood alleviated all of her allergy symptoms, as well as helping out her digestion and other things. I was sold.

I also got a new multivitamin that I’m hoping I’ll like better than my current one. The salesgirl told me that she likes this vitamin for providing energy, and that’s definitely something I could use. My late grandmother always told me that the vitamins sold in grocery stores and drug stores are synthetic and do absolutely nothing for your body. She told me to look for supplements derived from whole foods.

Check.

I also had my usual shopping buddy with me, who picked up an organic lollipop at the checkout counter.

But that’s not the only good news I have.

 

This is the other good news. These are delicious.

When I made our anniversary cake, I used the excess batter to bake these mini bundt cakes and then froze them. Today I took them out of the freezer and looked for the perfect glaze to go on top.

Let me assure you, this was the perfect glaze to go on top. Which is why I’m going to share the whole recipe with you now. Try not to gasp too loudly when you see below that this is an embellished cake mix. I know, I know, it’s not usually how I roll. But sometimes it’s easier and more predictable than making a cake from scratch.

Triple Chocolate Mini Bundt Cakes (adapted from the Never-Ending Chocolate Cake from the Cake Mix Doctor)

  • 1 box dark chocolate cake mix (I used Duncan Hines Moist Deluxe)
  • 1 package dark fudge instant pudding mix
  • 1 1/4 c. buttermilk
  • 1/2 c. vegetable oil
  • 1 t. vanilla extract
  • 1/2 c. real chocolate syrup
  • 1 T. instant coffee grounds
  • 4 eggs
  • 1 1/2 c. mini chocolate chips

-Mix all ingredients but the chocolate chips on medium speed for a few minutes, until the batter is creamy and smooth. Fold in the chocolate chips.

-Pour the batter into well greased mini bundt pans and bake at 325 degrees for about 45 minutes, or until the cake starts to pull away from the sides of the pan and a toothpick inserted comes out clean. Cool on a wire rack until ready to glaze.

Peanut Butter Glaze (adapted from Whipped)

  • 1/2 cup milk
  • 1/3 c. peanut butter
  • 1 T. powdered sugar

-Heat the milk in a small saucepan just until bubbling. Whisk in the peanut butter until it melts into the milk completely. Remove from heat. Whisk in the powdered sugar. Use a spoon to drizzle glaze over the cakes.

My cakes were cool when I glazed them but I bet this would be even more amazing over warm cake.

I added some extra mini morsels on top.

Not that they needed it. At all.

The best part is definitely biting/cutting into one of these babies and tasting how soft and moist the crumb is. The glaze is delicious but the flavor of peanut butter doesn’t overwhelm the chocolate at all. So even if you aren’t crazy about peanut butter (unlike me…I can eat it with a spoon straight out of the jar…) but love chocolate, I bet you would still enjoy this.

This would work just as well in a regular bundt pan, cake pan, or even muffin/cupcake pan. I love the mini bundts because they are perfect portion sizes and make serving a lot easier.

So darn good.

Tomorrow the husband and I are heading out to Jekyll Island on the southern Georgia coast for a conference. Jason is going NIGHT SHARK FISHING (??!!!!????!!!) and so I will likely have some time to blog while he’s doing that tomorrow evening. See you mañana!

Summer Bucket List

This was the first “grown up” summer I’ve ever experienced, meaning it wasn’t spent just watching movies, drinking lemonade, and going to the pool for three months. Instead it was waking up before sunrise and sitting in front of a computer in a freezing office all day. But STILL, I’ve been trying to hang on to those moments where it really feels like summer.


And I realized in the past week or so that there are some things I just have to do before this summer flies me by. My actual list is very long and unrealistic, but I’ve narrowed it down to things I actually hope I can accomplish.

  • Go to the beach– I mean, really, how can I let summer go by without ever seeing the ocean???
  • Bake a fresh peach cobbler– Not sure how this hasn’t happened yet, but it needs to happen ASAP.
  • Visit the aquarium– My hubster and little sister have never been, and that needs to change because Atlanta now has the largest aquarium in the country!
  • Transfer family photos and videos onto computer– I have been meaning to do this for ages, and if I don’t do it soon I’m afraid it won’t ever happen!
  • Visit (ambush) the health food store– We’re lucky to have several wonderful health food stores in the Atlanta area. In Virginia? Not so much. And least not in the half of the state where we live. I need to stock up on supplements and other goodies before we leave Georgia.
  • Go to Sweet Auburn Market– This is a historic and special place that I was recently reminded of by some family friends, and now I must go before the summer is over.
  • Make some homemade ice cream- We have an ice cream maker that we used to break out every summer, but it hasn’t made an appearance in far too long!

You think I can do it? We’re going back to Virginia in just 3 weeks!  :0

Now, about that cocktail.


I love making refreshing drinks in the summer, and not nearly enough have happened this year so fajita night was the perfect time to break this baby out.

It was the perfect accompaniment to our steak and chicken fajitas.

I’ve told you all before that this is one of my favorite meals to make, but back when I did that post my photography skills were not quite up to par. And by that I mean that those pictures look like crap. This food deserves to be shown off for how beautiful and delicious it actually is. I can’t do it perfectly, but at least I can do it a heck of a lot better than I used to be able to.

Tyler Florence is a genius. That, and I’ve had a huge crush on him since I was like 14. But that’s unrelated to how awesome his fajita recipe is.


THIS feels like summer.
